Cornbread with butter is delicious with coffee, and is also the perfect companion to a Puerto Rican asopao (soup with meat and rice).
1. Cream the butter (stir/beat the butter until it is smooth like cream), add sugar and beat well.
2. Add eggs and vanilla.
3. Combine the flour with corn meal, salt and baking powder and add this mixture to the rest of the ingredients alternating with milk.
4. Grease a mold and pour the mixture into it. Bake at 350°F for 30 minutes to an hour, depending on the oven used.
